That’s right! I dare you not to become addicted to this salad. There isn’t a whole lot to say about it except that if you’re a fan of kale, red pepper, and carrots I think you’ll find immense pleasure digging into a bowlful of Thai Kale Salad with Sesame Garlic Dressing 🙂
The salad is easy to put together, substantial and the ingredients hold up well which makes it a good candidate for potlucks and brown bag lunches. The edamame and cashews are flavor and texture bonuses!
For me personally, it’s the dressing that makes this salad so addicting. Sesame oil mixed with soy sauce, vinegar, lots of garlic (I do mean lots), honey, lemongrass and lime juice is a combination guaranteed to delight your taste buds. Of course you’re welcome to adjust the amount of garlic in the dressing to your own preference.
