Can’t decide if you wanna go with vegetarian fare or have something with meat for dinner? Start here with this Moroccan Chickpea and Chard Stew and I don’t think you’ll be disappointed. And actually… if the answer to the opening question is a split decision in your family this stew is a win-win.
I’m a huge fan of complex layers of flavor and this stew hits the mark. The vegetables are coupled with aromatic spices, chopped dried apricots and preserved lemons for a unique flavor profile that offers a good amount of back-of-the-throat belly-warming heat. Just right for chilly nights. The chard stems add a light cooling note akin to celery and the chickpeas are rich and creamy.
Serve this stew alone, with some grains or flatbread such as Nan, and it’s a satisfying meatless entree. Or serve it as a side dish with the roasted meat of your choice. Personally, I see roasted lamb in my future with this stew :-).
