Peaches… Eat them out of hand. Bake a peach pie. Have a bowl of peaches and yogurt. Whip up a batch of peach ice cream. Or make peach caprese… which is how I decided to showcase peaches for this segment in the Best of Summer series.
Peach caprese two ways… first, as an appetizer. Just like traditional caprese but substituting peaches for tomatoes. In this case, the peaches weren’t terribly juicy or flavorful for that matter (what a shame), so I attempted to caramelize them in my cast iron skillet.
And secondly, a play on peach caprese transforming it into a dessert… macerated peaches and Basil Crème Fraîche Ice Cream with a parmesan cracker! It was different to say the least. It was also a bit of a curiosity 🙂 that I found very enjoyable and well worth the indulgence.
Without a doubt, summer is winding down, but there is still tons of time to enjoy the flavors of summer. Next week… corn 🙂
