Spinach Salad with Dates and Jicama

This is a lovely salad to serve at a Christmas buffet.
Serves 4

The Dressing
¼ c balsamic vinegar
¼ c olive oil
2 t finely chopped seeded jalapeno peppers
1 clove minced garlic

The Salad
½ c quartered pitted dates
½ c peeled jicama cut in matchstick size strips
8 c  spinach, torned
1/3 c red sweet pepper cut in to strips
