Galette Dough

This is an all purpose galette dough. Make your rustic pie sweet or savory. The variations are virtually endless.

Serves: 1 9½ inch galette
Ingredients
- 1½ cups of unbleached all purpose flour
- ½ teaspoon granulated sugar
- ¼ teaspoon kosher salt
- 9 Tablespoons cold unsalted butter, cut into ½ inch pieces
- 4 to 5 Tablespoons of ice water
Directions
- Mixing the dough can be done in a food processor or by hand.
- Combine the dry ingredients.
- Add the butter and mix until the dough looks like coarse meal.
- Sprinkle with 4 Tablespoons of water and mix until the dough comes together adding 1 teaspoon of water at a time just until dough comes together.
- Wrap in plastic wrap and refrigerate for at least one hour and up to 2 days.

Variations
Black Pepper: Add ½ teaspoon coarsely ground pepper to the dry ingredients.
Cornmeal: Substitute ¼ cup of fine cornmeal for ¼ cup of the flour.
Poppy Seeds: Add 2 Tablespoons poppy seeds to the dry ingredients.
This dough can be frozen for up to 2 months. Thaw in the refrigerator before rolling out.
