Southwestern Lime Vinaigrette

Makes about 1 1/2 cups

½ cup Tomato, seeded
½ cup Cilantro
4 Tablespoons Olive Oil
2 Tablespoons Cider Vinegar
2 teaspoon Lime Rind, grated
2 Tablespoon Lime Juice
½ teaspoon Salt
½ teaspoon Ground Cumin
½ teaspoon Chili Powder
½ teaspoon Black Pepper
2 Cloves Garlic, minced

Place all ingredients in a food processor and blend thoroughly.

Adjust seasonings to your taste.
