Chimichurri

Yield 1 ½ cup

½ bunch parsley (about ½ cup finely chopped)
2 T finely chopped fresh oregano
4 cloves garlic crushed
1 small red chili pepper (fresno) finely chopped or 1-2 t chili flakes
2 T red wine vinegar
1 T fresh lemon juice
½ c EVOO (or less depending on your preference)
S&P to taste

  1. Combine all ingredients
  2. Mix well
  3. Keep refrigerated and best if used within 1 week.
