Avocado Sauce


Avocado Sauce
Serves: 1½ cups
  • 1 avocado
  • 1 cup packed parsley, cilantro and chives (combined 1 cup or more to suit your taste)
  • 1 jalapeno, ribs and seeds removed
  • 2 cloves of garlic, peeled
  • Juice from 1 lime (more to suit your taste)
  • 2 Tablespoons olive oil
  • 1 teaspoon salt
  • ½ cup of pistachios
  1. All all ingredients except for the pistachios to a food processor and pulse until incorporated.
  2. Add the pistachios and pulse until sauce is mostly smooth.
  3. Add additional olive oil if desired or you may also add water to thin out the sauce to the desired consistency.
Remember that I have written the recipe to suit my preference. You control the consistency for this sauce with the amount of olive oil to suit your needs. The original recipe also called for the addition of water to give the concoction a liquid nature.
