Oh My Word… I am SOOOOOOO glad that spring has arrived with gusto here in the Pacific Northwest. It’s time to clean out the wood stove, spruce up the outdoor living space, start gardening in earnest and lighten up the food choices.
On that note, I’m very happy to share this recipe for Pea Salad with Ginger Miso Vinaigrette, which I originally discovered last year in Fine Cooking (one of my all-time favorite sources for scrumptious edibles).
The vinaigrette is bright and the salad crunchy with bites of cucumber and radish. The recipe as written calls for the bitter peppery addition of arugula, however any green will do so no need to feel constrained. I’m currently hooked on pea shoots 🙂 And talk about being hooked… wait until you taste the ginger miso vinaigrette! What a fresh bright welcome complement to the crisp salad ingredients.
The salad travels and keeps well so with the warmer days and thoughts of picnics and wine tasting adventures dancing in your head this salad will make a perfect addition to your menu!
